Separate the eggs. Beat the egg whites until stiff – it is best to add a pinch of salt before beating.

Whisk the egg yolks with the granulated sugar, add the milk and flour. Whisk until a nice lump-free batter is formed. Fold the beaten egg whites into the batter and gently combine.

Melt some butter in a pan and pour in the mixture. If you like, you can sprinkle some raisins on top.

Let the Kaiserschmarren stick to the bottom for a few minutes, until the Schmarren gets a brownish color on the bottom.

Tear it into pieces with a fork and turn it over so that the other side is also golden brown. Sprinkle with granulated sugar and toss briefly in the pan to caramelize the sugar.

Once the Kaiserschmarren is baked through and no longer liquid in the center, sprinkle with powdered sugar and serve hot with stewed plums.

Preparation Tip:

If there are no children among the eaters, the Kaiserschmarren tastes especially fine if you soak the raisins in rum for about 15 minutes beforehand.
