For the Kaiserschmarren, stir together flour, salt, egg yolks and milk until smooth. Beat egg whites and sugar until stiff and fold in. Pour the batter into a hot pan brushed with butter to the thickness of a finger.

Then divide into pieces with two forks and serve. Stew the peeled and cored apples with water and the cinnamon stick until soft, drain off any excess liquid, remove the cinnamon stick, blend and strain.

Finally, season with granulated sugar and lemon juice.

Preparation Tip:

Serve the Kaiserschmarren alternatively with stewed plums or compote.
