Instructions:

First prepare the plum roast. Wash the plums well, cut them in half and remove the seeds.

Put the cinnamon stick and cloves in a linen bag or tea bag, tie and boil in water together with sugar, lemon juice and lemon peel.

Mix in the plums and cook until they are soft after about 25 to 35 minutes. Remove the spice bag and refrigerate the plum roast.

Now thoroughly mix the yolks with sugar, milk and flour. Beat the egg whites with a pinch of salt until stiff and gently fold into the yolk mixture.

In a very large frying pan (or several smaller ones), melt butter, pour in egg mixture and sprinkle with raisins.

Fry on one side for several minutes, turn and tear the not yet fully set mixture into pieces with two forks.

Bake the “Schmarren” just long enough (best in a buttered pan in the preheated oven) until the mass has set.

Sprinkle with powdered sugar and serve with the plum toast.

Preparation Tip:

Kaiserschmarren can also be prepared without raisins.
