Instructions:

For the Kaiserschmarrn, first caramelize sugar in a saucepan for the plums, deglaze with apple juice and add the remaining ingredients. Simmer for 5-6 minutes. If necessary, use butter to assemble the liquid.

Beat egg whites with granulated sugar until whipped egg whites. Mix milk, flour, egg yolks, vanilla sugar and salt until smooth. Fold beaten egg whites into batter and mix in raisins. Melt some butter in an ovenproof pan and pour in the batter. Bake for 1-2 minutes on the stove, then bake in a preheated oven at 180 °C for 8-10 minutes.

Remove pan from the oven and cut the dough into small pieces with 2 forks. Sprinkle with granulated sugar and caramelize briefly in the tube (or on the stove).

Sprinkle with powdered sugar and serve the Kaiserschmarrn with the plums.
