For the Linzer stars, mix sugar, vanilla sugar, egg, butter, baking powder, flour, ground hazelnuts and spices with a hand mixer with dough hook.

Wrap dough in plastic wrap and let rest in refrigerator for half an hour.

Then roll out dough on a floured work surface about 3 mm thin and cut out the same number of cookies with star holes as cookies without holes using a star cutter for Linz cookies.

Place the stars on a baking tray covered with baking paper and bake in a preheated oven at 170 °C for 10-15 minutes.

Let the cookies cool down after baking. Heat the rosehip and quince jam separately in small pots on the stove, or in the microwave.

Spread all cookies without a hole with the jams and cover with the other star cookies.

Dust the cookies with powdered sugar and fill the star hole with additional jam, if desired.

Allow the Linz stars to dry for at least an hour before placing them in a cookie tin.

Preparation Tip:

The jam for the Linz stars can be mixed with a little rum, or orange liqueur.
