Instructions:

For the Raffaelo cupcakes, mix well all the ingredients for the batter, except the Raffaelo. Preheat the oven to 180 °C convection oven. Divide the batter into 6 cups and press a Raffaelo into each. Bake for about 15 minutes.

For the cream, mix the pulp of one vanilla, low-fat yogurt, low-fat curd cheese and sweetener. Prepare gelatin according to package directions and stir into the cream.

Chill the cream for about half an hour and then pipe onto the cupcakes using a piping bag.

Cut three Raffaelo in half and press onto the cupcakes.
