For the Mac’n’Cheese Waffles, first cook pasta in salted water until al dente, drain, rinse with cold water and drain well. Return to the cooking pot.

Cut bacon into fine strips and fry in a little oil in a pan over medium heat. Peel and dice the onions and add to the bacon. Saute for a few minutes until translucent, then set aside.

Melt butter in a saucepan over medium heat. Add flour and simmer for 1 minute. Add milk, stirring constantly. Season with mustard, nutmeg, cayenne pepper and pepper. Simmer for about 5 minutes, stirring constantly.
