What is a Macedonian schnitzel is a roulade in our country. There is and essential difference. Macedonian cutlets are rolled lengthwise and not widthwise like our roulades. For each person we calculate 2 narrow veal cutlets (if you want, you can use the same pork cutlets) and one narrow slice of raw ham.

As a filling, the feta cheese is mixed with dill, rose peppers and parsley with the help of a fork.

The cutlets are pounded under a plastic wrap until they are very thin, seasoned with a little pepper, topped with ham and spread with part of the cheese mixture. Then the meat is rolled up and fixed with toothpicks. The rolls are lightly rolled in flour and fried in clarified butter or alternatively oil.

This is served with cabbage salad, which is obligatory for this country, burek or alternatively fresh white bread and a glass of wine.

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
