For the carnival doughnuts, mix yeast with 4 tablespoons of milk and 1 tablespoon each of flour and sugar. Let rise until the yeast shows cracks.

Cream butter, powdered sugar, vanilla sugar, lemon zest, egg yolks, add to flour together with rum, salt and milk, beat vigorously. Cover and let rise for about half an hour.

Cut off portions of 85 g, shape into balls, press flat, cover again and let rise for approx. 45 – 60 minutes.

Bake in the deep fryer at 170 °, turn over after 4 minutes (covered) and bake covered for another 3-4 minutes. Drain the doughnuts on a paper towel.

Sprinkle with powdered sugar.

Preparation Tip:

The Faschingskrapfen in no case bake with more temperature, is a very compact mass, thereby 7 - 8 minutes baking time. Also keep the amount of butter, more butter makes the dough too heavy.
