Instructions:

First, cut the melanzani into cubes and fry in oil. Add the chopped bell bell pepper.

Cut the tomatoes into small pieces, press the garlic cloves, add oregano, salt and pepper. Let it boil down for about 15 minutes. Add a little water if necessary.

Spread in a greased baking dish (not too big). Spread the sliced mozzarella on top and sprinkle with parmesan.

Bake in the oven at 180°C until the mozzarella has melted.

Serve the casserole garnished with basil.
