For Mexican carnitas, cut the pork into medium-sized pieces, remove excess fat and salt. Heat oil in a skillet and sear meat in portions until hot.

Spread meat in a baking dish with a lid. Heat water, orange juice, lime juice, chopped garlic, chili powder, cumin powder, oregano and pepper in the pan briefly to mix everything and release the roast residues.

Then pour everything into the baking dish. Set the oven to 150 degrees and bake the meat in it for about 2 hours until the meat is so soft that it falls apart. Put remaining liquid aside.

Let meat cool, remove fat and shred with two forks. Add liquid back to the meat, spread everything on a baking sheet and grill in the oven for 5-7 minutes until crispy.
