Instructions:

Put all the ingredients for the mulled wine in a frying pan and boil to a third of the original amount of wine. Strain.

For the parfait, beat the egg yolks with the sugar to a thick cream, this also takes at least five minutes with the mixer.

Boil up the boiled mulled wine once more and pour it into the cream while stirring until it is boiling hot. Cool down while stirring frequently.

Whip the cream until stiff. Mix with the heavy cream and fold the amount exactly into the mulled wine cream. Perfume with the cinnamon.

Line a suitable cake or baking dish with cling film and pour in the mulled wine cream. Place in the freezer for at least three hours to set.

To serve, turn the parfait out onto a plate and cut into slices. Garnish with orange fillets and orange sauce, stewed red wine pears or apple slices.

Tip: You can fill the parfait into small molds and pack them well after freezing, then the parfait will keep fresh for six weeks when frozen.
