Pasta dishes are always a good idea!

1. egg, 1 pinch of salt, about 5 tbsp. water and flour stir to a smooth dough. Allow to swell for approx. 10 min.

2. clean and rinse the vegetables. Cut off melanzani, peppers and zucchini. Coarsely dice tomatoes. Peel and finely dice onion and garlic.

Sauté onion and garlic in 1/2 tsp hot oil. Sauté vegetables briefly. Add paradeis pulp and sauté. Add 5-6 tbsp water and kitchen herbs. Bring to a boil and simmer with lid on for about 10 minutes until tender. Season with salt and freshly ground pepper.

Heat a coated frying pan with 2-3 drops of oil. Bake a pancake from the dough in it until golden brown. Serve with ratatouille.

Extra tip It is worth making double ratatouille on the spot. Freeze half of it and serve it the next day with long grain rice, potatoes or pasta.
