In a large saucepan, boil 4 liters of tap water with salt and cook the pasta al dente on the stove for 8-11 minutes according to the instructions on the package.

Meanwhile, dice the streaky bacon. Heat the oil in a high-walled frying pan and fry the bacon in it.

Pour the pasta onto a colander and add it to the bacon in the frying pan, draining it properly.

Mix the eggs with a little salt, pour over the noodles and let them set gently, turning them throughout. The eggs should still have a fluffy texture – keep like egg custard. Sprinkle with freshly ground pepper. Offer the Parmesan separated for it.
