For the pizza dough, coarsely chop the yeast and put it in a small bowl with the granulated sugar. Wait a few minutes until the yeast has melted. Then add some of the lukewarm water and whisk.

Put the flour in a large bowl (preferably a yeast bowl with a lid) and stir about 3 tablespoons of the flour into the yeast mixture. Make a well in the center of the flour and pour the yeast mixture into it, covering it with some flour.

Cover with a lid (or a damp tea towel) and place in the sun. In winter you can put the dough either to the heater or in warm water. After about 30 minutes in the sun (next to the heater or in warm water it takes longer!) check if the dough mass has already doubled.

When the germ mass has risen, mix in the salt, olive oil and the remaining water and knead everything into a dough. If the dough is too hard, add a little water (always lukewarm).

Then put the lid back on the bowl and again put it in the sun until the dough has risen to about twice its size. Knead briefly with your hands and let rise again (but it is not absolutely necessary).

Preheat the oven to maximum (convection), also heat the baking tray. Then either roll out the desired amount of pizza dough on some flour or pull it apart by hand and top as desired.

On baking paper (cut off the edges otherwise it can burn!) in the tube.
