Instructions:

Beat butter with powdered sugar until fluffy. Add yolks, salt and lemon zest. Add half of the apples and the rum. Beat egg whites with granulated sugar until stiff peaks form. Mix nuts, poppy seeds and flour together. Gradually have with the snow under the egg mixture (by hand, otherwise the air is out again). Cover a baking tray with baking paper and spread the mixture on it. Spread the remaining apples on top and press them in lightly. Bake in the preheated oven at 170° for about 60 minutes.

Preparation Tip:

The apples should not be too juicy. You can also omit the nuts, but then you should take at least 1/3 more poppy seeds.
