For the Pork Steak in Red Wine Cranberry Sauce, wash and parcel the tenderloin and cut into 4 equal portions. Season the meat with salt and pepper and sear on both sides in hot clarified butter.

Remove from the pan and roast in another ovenproof pan in the preheated oven at 150 degrees for about 15 – 20 minutes. Cover the pan while doing so. Remove the meat from the oven and let it rest wrapped in aluminum foil for about 10 minutes.

For the sauce, peel the onion and chop it coarsely. Do the same with the greens.

Sauté both briefly in the pan, which still has the drippings from sautéing the fillet. Deglaze with red wine and soup, add bay leaves and peppercorns and let everything boil down for about 15 minutes. Then strain the sauce and thicken with sauce thickener.

Finally, season the sauce with salt and pepper and the cranberry compote and serve with the pork steaks.
