Quarter and clean the peppers, and place them skin side up on a baking sheet. Grill under the heated oven broiler on the top rack until the skin darkens. Cover with a wet dishcloth and cool. Rinse the potatoes thoroughly, or remove the skin. Cut the onions into thin strips.

Fry the potatoes and onions in oil. Season with garlic, pepper, salt and paprika powder. Add vegetable stock and ajvar, cook with closed lid at medium heat for 25 minutes. Skin the cooled peppers and cut into 2 cm cubes. Clean the mushrooms. Add both after 20 minutes. Season if necessary and sprinkle with chives.

Our tip: Always use fresh chives if possible!
