Try this delicious cake recipe:

1. for the dough, mix yolks with salt and water. Crumble flour with butter and knead together with yolk mixture. Wrap dough in plastic wrap and rest until chilled, about 1 hour.

For the filling, pluck fennel greens, chop coarsely and set aside to cool.

Cut fennel into on-the-spot thick strips and boil briefly in salted water. Strain, rinse and drain. Cut olives into small pieces.

3. preheat oven to 200 °C. Roll out dough on a floured surface to the thickness of the back of a knife. Line a tart pan (O 24 cm) with the dough, spread fennel, crab tails and olives evenly on top. Mix eggs with fennel greens, salt, milk, pepper and half of the cheese and pour over the filling.

Sprinkle remaining cheese on top of cake and bake in oven (middle rack / wire rack) for about 30 minutes. Reduce temperature to 170 degrees and finish baking the quiche for about 15 min.
