Place the dough together with the parchment paper in the baking tray. Fold over the protruding edge of the dough, cut away the excess parchment paper. Prick the bottom of the dough with a fork and put it in the refrigerator.

Mix sugar, curd, egg and vanilla sugar. Wash lemon with warm water and dry. Grate about 1 teaspoon of zest through the finest grater directly into the curd. Grate half of the apple into the curd as well.

Remove rhubarb and cut into cm-wide pieces.

Spread curd mixture on pastry and evenly distribute rhubarb pieces on top. Put the bottom half of the cake in the oven at 200 degrees and bake for forty minutes. If the surface gets too dark, cover with aluminum foil.

Meanwhile, squeeze the lemon to juice. Slice the rest of the apple and the strawberries. Cut mint leaves into thin strips. Mix everything with the juice of one lemon and sweeten to taste.

Sprinkle the cream with powdered sugar and cut into pieces. Arrange and bring the apple-strawberry mixture to the table with it.
