Instructions:

For the smoked salmon wrap with avocado cream and dill mustard, slowly stir the spelt flour into the water, being careful not to create lumps. Stir in the baking powder, salt and canola oil.

Heat pan and pour liquid batter, without adding more oil, into pan with a ladle.

Make sure the wrap is as thin as possible and swirl the pan. Fry on both sides until the wrap is golden/brown. To keep the wraps warm, simply wrap the patties in a kitchen towel.

Peel and pit the avocado and mash the flesh with a fork. Season with lemon juice, salt and pepper.

Spread wrap with dill mustard and avocado cream and top with smoked salmon and cucumber and roll up.
