Season the whipped cream with the bay leaves, juniper berries and a finely chopped onion and steep for one night. Next to it, also soak the salted herrings for at least one day.
Debone the herrings and cut them into finger-thick pieces. Cut the other onion into rings, dice the apple and pickled cucumber. Put herring, cucumber, onion, apple and prepared whipped cream in layers in a stoneware pot. Leave to stand for a few hours. Serve with hot boiled peeled potatoes.
