For the St. Gallen bread, first preheat the oven to 180 °C.

Stir the butter until peaks form. Add sugar with egg yolks and stir until the mixture is pale. Mix in lemon zest and spices. Combine almond kernels with flour and mix in as well.

Cover baking sheet with parchment paper. Spread mixture on it to the thickness of a finger, brush with egg white and sprinkle with hail sugar. Bake on the middle rack for 25 to 30 minutes.

Cut the still hot St. Gallen bread into pieces and let cool.
