For the strudel with pear curd filling, first peel and finely slice the pears.

Mix the sliced pears with lemon juice. Add curd, preserving sugar, raisins and vanilla sugar. Depending on the moisture of the pears, add white bread crumbs or sponge cake crumbs.

Roll out puff pastry and place filling on top, beat together, brush with beaten egg and place on prepared baking sheet.

Preheat oven and bake at about 175 °C for about 35 minutes until light brown.

Serve the strudel with pear curd filling sprinkled with powdered sugar.
