For the sugar melon with prosciutto, first remove the peel from the sugar melon and cut into 8 slices. Wrap with the prosciutto and set aside.

Then wash the arugula and pat dry. For the dressing, mix the oil, balsamic vinegar, sugar and salt.

Pour over the arugula and spread evenly. Serve together with the melons.

If you want you can add cocktail tomatoes and olives to the melon with prosciutto.
