Noodle dishes are always a good idea!

1. make rice noodles as described on the package or soak in boiling hot water for 5 min.

2. cut chili peppers and shallots, mix with lime juice, sugar, tamarind water and soy sauce and season with salt and freshly ground pepper.

Heat both types of oil in a heated wok or large heavy skillet over high heat. Add tofu and stir-fry for 1 minute. 4.

4. add chili mixture, bring to a boil, and stir continuously until thickened, about 2 minutes.

5. Drain rice noodles and add to chili mixture form. Using 2 spoons, turn and stir noodles until no longer steaming. Serve immediately garnished with the peanuts.
