Pites are the Greek equivalent of böreks, the filled Turkish dumplings. They come in all shapes, with different types of dough and fillings such as minced meat, spinach or cream cheese. In Greece, they are made from filo dough and traditionally filled with feta.

Preheat the stove to 190 degrees.

Chop the feta in a baking bowl. Add cream cheese, parsley and eggs and mix well with a fork. Season with pepper to taste.

Cut the filo dough lengthwise into seven cm wide strips. Take one strip and cover the remaining strips with a wet dishcloth.

Brush the strip with olive oil and place a heaping teaspoon of cheese mixture on one corner. Place the remaining strip of dough across it. Then fold the strip of dough with filling to form a well-sealed triangle.

Form more filled triangles until dough and filling are used up.

Place on a greased baking sheet and brush with oil. Bake the dumplings in the stove for fifteen min until golden brown. Bring to the table hot.
