Instructions:

An asparagus recipe for gourmets:

1. clean, rinse, dry and cut wild garlic into narrow strips. Mix with yolks, cottage cheese, ricotta, bread crumbs and salt. Cover quantity and rest.

2. peel asparagus spears, cook in lightly salted water, barely covered, until al dente. Remove asparagus spears from stock, cut into pieces and spread evenly in deep plates.

In a saucepan, melt butter, add flour, foam, pour in asparagus stock and cream and simmer for 5 minutes. Remove the sauce from the stove, cool a little, then mix in the yolks. Pour the sauce over the asparagus. Preheat oven to broil setting.

Heat oil in a high frying pan about 2 fingers high. Form 12 dumplings from wild garlic cheese mixture. Bake in the oil over medium heat until golden brown. Lift out and drain on kitchen roll.

Bake asparagus briefly (approx. 2 min) in the oven (middle rack) and serve with the dumplings.
